In honor of #worldbreastfeedingweek I wanted to share my FAVORITE breakfast recipe from my breastfeeding journey!

I wish I had found this WAY sooner in my breastfeeding journey, but better late than never.  And now I want to pass it on to you.  This recipe is for everyone, so you don’t have to currently be nursing FYI.  However, as a Mom, I love how this has balanced macronutrients, it’s so filling, you can eat it with one hand and it’s easy to prep for several morning ahead of time.  Stock up on a few wide mouth mason jars and get mixing!

First, you will need airtight containers.  I use mason jars.  But you can use something like your empty peanut butter jars too!  

Next, the “base”.  There are tons of recipes out there, but this base is the texture that I like.  If it’s too thick, add a little more milk.  If you don’t like Chia Seeds, add ¼-½ cup of oats in their place.  Then give it a good stir!

½ cup of rolled oats

⅓ cup almond milk (or milk of your choice)

⅓ plain Greek yogurt (or coconut yogurt for a non-dairy version)

1 tablespoon Chia Seeds

(Optional) 1 tablespoon maple syrup 

 

Finally, the add-ins!  This will create the flavor burst you’re going for.  Pick your concoction and let it sit for at least two hours in the refrigerator before eating, or overnight!  Here are a few fun add-ins:

 

Chocolate, peanut butter and banana

1-2 teaspoon cocoa/cacao powder

1 tablespoon peanut butter (or any nut butter)

½ cup sliced banana

 

Carrot Cake

¼ carrots, shredded

¼ raisins

1 tablespoon maple syrup 

2 tablespoons pecans, chopped (optional)

1 teaspoon cinnamon 

 

Pumpkin Spice

½ cup plain pumpkin purée

0-2 tablespoons honey or maple syrup

½ teaspoon cinnamon 

¼ teaspoon nutmeg

 

If you don’t like/have Greek yogurt, what can you sub in?
Regular plain yogurt will work, too, although your end result will be a bit thinner. If you aren’t a fan of yogurt at all, you can leave it out all together, double the chia, add a little ground flax, and add an extra 1/3 cup of milk. Your final result won’t be as creamy or pudding like, but it’ll still be good!  ENJOY!
